Where do I make a beeline for at a summer fair?
The food trucks.

Our friends told us there would be perch rolls at the Lift-Off Festival in Cornwall, Ontario. And something inside me snapped.
PERCH. ROLLS.
I was a crazed animal. I practically hoisted my husband over my shoulder, threw him into the car and we burned 5 hours east to Cornwall on a Saturday morning.
Once there, I could sense my sandwich in the air. I had the focus of a cheetah.

Allegedly, there were dozens of beautiful hot air balloons taking off and the musical stylings of Canadian greats Jarvis Church and Chantal Kreviazuk. (or so says my husband). But I was there for one thing, and one thing only.

Oh the glory. A fried local perch fillet encased in a pillowy hot dog bun, topped with sweet-hot mustard mayo. Easy enough to make at home, but I wouldn't. I couldn't! Some things must be eaten from a truck at a local fair. And perch rolls is one of them.
What do you indulge in at your local fair: the sweet stuff (cotton candy; caramel apples) or the savoury (PERCH ROLLS; back bacon sandwiches; fresh cut French fries)? Would you drive 5 hours for your fair fix?
