I try to eat real, healthy food as often as possible. I love my whole grains and my healthy fruit recipes.
Do I always succeed? No... no, I don't. But when you can make something that is simultaneously nutritious and tasty, why the heck not? Am I right?
Take these whole wheat pancakes:

Healthy, yet fluffy and delicious.
Here's how to make them.
In a bowl, whisk together:
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- A generous 1/4 tsp nutmeg
- A generous pinch of salt
In a separate smaller bowl, whisk together:
- 1 egg
- 1 cup 1% buttermilk
- 1-1/2 tsp grated lemon zest
Pour the wet ingredients over the dry and whisk, just until moistened, but still slightly lumpy.
Let the batter stand for 10 minutes before making pancakes on a greased griddle over medium heat.
You can, of course, add fresh blueberries to the batter, or diced apples and a little cinnamon. Or any other normal pancake add-in. But the nutmeg/lemon rind combo makes them taste a bit like old-fashioned plain doughnuts from Timmy's. Seriously!
Add a drizzle of maple syrup, honey or a fruit coulis after they're done. Or, for a more savoury version, try a poached egg on top.
