Hot weather and summer days have me yearning for an abundance of fresh fruit. A bundle of fresh strawberries was the inspiration for these pops, which require only 4 simple ingredients. When the temperatures are sizzling, little beats a frozen treat like this one.
5-Minute Strawberry Popsicles
I like always having a couple of ready-to-eat ice pops on hand in my freezer. They make the perfect afternoon snack and a healthy dessert option. The temptation to reach for a favourite ice cream indulgence is high during this time of year, but I find that the temptation is easily averted when you have another satisfying option to turn to.
Fresh Ontario Strawberries
5-Minute Strawberry Popsicles
Makes between 4 and 6 popsicles depending on size of moulds.
2 cups Greek yogurt
2 tbsp honey
1 tsp vanilla extract
10 to 12 strawberries, sliced in 1/4-inch (5 mm) thick slices
In a bowl, mix together yogurt, honey and vanilla. Fold in strawberries. Fill ice pop moulds and freeze until firm.
