It happens in an instant. One minute you’re knee-deep in planning, preparing and cooking. You’re standing in the kitchen flushed and fussing over last-minute details. And then, whoosh, in a flash the table’s cleared, the guests are gone and all that remains is a big ol’ pile of turkey.
No idea how to deal with the leftovers? No problem. I’ll share a recipe for my favourite leftover turkey sandwich, The Après-Thanksgiving Club. Plus, our top 6 Canadian Living Tested ‘TIl Perfect recipes for fresh and exciting ways to use turkey through the week.
The Après-Thanksgiving Club Sandwich is an enjoyed annually at my house. I suggest making this on the second or third day after the big feast, just as you begin experiencing holiday meal nostalgia. Here’s how to make one:
•Lightly toast and butter two slices of your choice of bread.
•Spread the slices with mayonnaise.
•Fry 2 pieces of bacon until crisp, drain on paper towel-lined plate.
•Top one piece of the toast with sliced leftover turkey, leftover stuffing (if you’ve got it), bacon, lettuce and cranberry sauce (home-made is best).
•Sandwich with the other piece of toast and tuck in.
