It probably isn’t surprising that we take our chocolate very seriously here in The Test Kitchen. Whether we’re creating a recipe for a new chocolaty treat or just nibbling on a piece of chocolate as an afternoon snack, good quality always makes a real difference. I love a really dark chocolate – 70 to 85 per cent cocoa is my number 1 pick – but I’d have trouble saying no to a couple of squares of velvety sweet milk chocolate after a long workday. Add some nuts, dried fruit and spices, and you’ve got yourself the perfect pick-me-up for anytime of the year – and especially to celebrate Valentine’s Day! So fellow chocolate lovers rejoice!
