The day is designed to raise funds for Canada’s shelters, humane societies and provincial SPCAs. Individuals or teams register and invite friends to their National Cupcake Day party. At the party, guests donate money and dig in to delicious home-baked cupcakes, with all the proceeds going to help animals in need.
This past weekend, I got into the spirit. These are decadent Chocolate Cupcakes topped with my favourite peanut butter icing. My dog, Artie, loves peanut butter, so it seemed appropriate.
The pawprint decoration is so easy. Just melt chocolate and spread evenly on a parchment paper–lined baking sheet. Chill for 15 minutes, then let stand for a couple of minutes at room temperature. Use the big end of a large plain cake decorating tip to cut out the pad, and the small end to cut out the toes. It’s that simple!
