St. Patrick’s Day Cupcakes

Celebrate St. Patrick’s Day by feasting on fish and chips, drinking a pint of beer and baking some boozy cupcakes for your friends and colleagues.

You could celebrate with a mixed shot of Irish cream liqueur and whiskey dropped into a pint of stout – or try this sweeter version, which is a little more portable and acceptable to bring into the office to share with family and friends.

Decorate with melted chocolate coating wafers or decorating gel.


Stout Chocolate Cupcakes

1-1/2 cups all-purpose flour
1 cup granulated sugar
1/3 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
1 cup stout beer, such as Guinness
1/2 cup vegetable oil
1 tsp vanilla
5 tsp cider vinegar

In large bowl, whisk together flour, sugar, cocoa powder, baking soda and salt. Whisk in beer, vegetable oil and vanilla. Stir in cider vinegar.

Scoop batter into 12 paper-lined muffin cups.

Bake in 350°F (180°C) oven until cake tester inserted into centre comes out clean, 18 to 20 minutes. Transfer to rack. Let cool completely.


Irish Cream Icing

1/2 cup butter, softened
2 cups icing sugar
1/4 cup Irish cream liqueur
1 tsp vanilla
Decorating sugars and sprinkles (if desired)

In bowl, beat butter until light; beat in icing sugar, 1/2 cup at a time. Beat in liqueur and vanilla until smooth. Pipe or spread onto cupcakes.
