Best healthy weeknight dinner: chicken with soba noodles

Workdays are the worst for me and dinner. Because when I finally get home, after a busy day and a long highway battle, the LAST thing I want to do is cook.

The hard part is that I love a home-cooked meal. And I really do love to cook—when I have time. But there is one dish I can put together in my sleep, and it saves me on many nights. It’s my recipe for a happy tummy after a long, hard day. Here’s how I make it.

Chicken With Soba Noodles

1. Boil some soba noodles. Follow the package directions and rinse them under cold water when they’re done. Drain them well, shaking off as much water as possible.

2. Make some sauce and toppings. For the sauce, heat together a 1:1:1 mix of soy sauce, instant dashi (fish) broth and mirin (sweet Japanese rice wine) until it’s fragrant, then let it cool. Then cube and cook boneless skinless chicken breast in a little bit of oil until it’s no longer pink inside. Steam or blanch some green veggies to go on top (I like sugar snap peas, beans or broccoli). Slice up some green onions and get out some shredded nori or nori strips.

3. Garnish and add sauce. Dress up your bowl of noodles with whatever amount of the toppings you like. Experiment with different veggies and maybe even some pickled ginger if you like it.
