Three reasons why we love beets

This colourful, versatile root vegetable has been a staple on dinner tables and restaurant menus for some time. We adore this vegetable and here’s why:

  1. They’re super healthy. Beets contain folate, manganese and potassium, which are essential for good health. They are also contain betalain, which has antioxidant and anti-inflammatory properties and is what gives beets their unmistakeable red colour.
  2. They’re inexpensive and easy to find. You can usually find locally grown loose or bunched beets in most supermarkets. As an added bonus, they don’t cost an arm and a leg, so you can easily add them into your weekly rotation of vegetables without damaging your budget.
  3. They’re versatile. I love to keep blanched or roasted beets on hand to throw in salads, soups or dips; sliced up in sandwiches or even for pureeing in my morning smoothie. If you’re looking to try something totally different, check out my recipe for beet risotto here.

Tip: When buying beets, look for firm, tight bulbs. Refrigerate in your crisper for up to two weeks.
