Don’t even think about throwing away those broccoli stalks!

A lot of recipes call for using broccoli florets and don’t mention anything about what to do with the stalks. If you generally just toss the stalks straight in the garbage without thinking about it twice, read on!

It turns out that the stalks are really delicious, super healthy (they’re packed with vitamin C) and can be used up in a variety of dishes. They have a nice firm texture, making them a good candidate for stir-frys, soups and various pasta dishes but they also makes a nice side dish on their own.

Just make sure to peel the outer layer of the stalks before using them, the exterior part of the stalk is tough and unpleasant to eat.

Broccoli Stalks

To use up your broccoli stalks in a super easy side dish, try the following recipe:

Garlicky Broccoli Stalks

• 2 tsp olive oil
• 2 cloves garlic, minced
• Pinch red pepper flakes
• 3 broccoli stalks, peeled and thinly sliced
• Pinch salt

In nonstick skillet, heat oil over medium heat; stir in garlic and red pepper flakes. Cook, stirring, until fragrant, about 1 minute. Stir in broccoli stalks and salt, cook, stirring occasionally, until stalks are tender-crisp, about 5 minutes.
