What to make for dinner when there’s nothing in the fridge

It’s an all-too-common scene: Your head is deep in the refrigerator and you just hope that a ready made meal will jump out and bite you in the face. But it doesn’t. In fact, the fridge is almost totally empty. Except for that carton of eggs. Oh glorious eggs! There are so many things you can do with them. So, if there isn’t much in the fridge and you want a home-cooked meal, look no further than those eggs (this plan of course will not work if you don’t have eggs in your fridge).

Things to do with eggs:
Make an omelette. Really, they’re so easy to spruce up. If you have some odds and ends of veggies, just sautee them and add them to your eggs. If you have some fresh herbs, toss them in (dried herbs work just as well). If you have some cheese, you can add that too. And if all you have is a jar of salsa, that works too, as a dollop of salsa goes a long way in sprucing up plain old eggs.

Hard boil those eggs. You can then make an egg salad with a little mayo, salt and pepper. Spread it on toast or some crackers. Poach ’em. The other week I had left over potato gratin in the fridge … and little else. I warmed it up in the oven, and poached two eggs to place atop my leftover gratin. It was the perfect dinner!
