Dinner cheats: start with store-bought ravioli

Let’s be honest. No matter how much I love making meals from scratch, there’s always that one night in the week (at least one!) where schedules are hectic, unexpected things arise and just the thought of having to put something on the table is too daunting to think about. On those nights, it can feel so incredibly convenient to reach for the phone and order take-out. Sound familiar? If it doesn’t, I want to meet you!

For those nights, I like to start with a store-bought cheat ingredient that I have in my fridge or pantry and add a few simple ingredients to make it a super quick (and healthy) meal.

Store-bought ravioli are one of my favourite cheat ingredients. Although I do love making homemade ravioli, it is a process and certainly not something I do more than a few times a year, at most. However, you can now find super delicious, store-bought ravioli made with all natural ingredients.

Pumpkin ravioli

Here’s a super quick meal I made this week, starting with a package of store-bought Pumpkin Ravioli from President’s Choice Black Label collection. It’s fresh egg pasta, filled with a mixture of pumpkin purée and crushed amaretti cookies (for a little sweetness).

Pumpkin Ravioli with Seared Mushrooms and Parmesan Cheese
Serves 2

16 pumpkin-filled ravioli
1 tbsp olive oil
2 cloves garlic, minced
8 cremini mushrooms, sliced
2 cups baby spinach
Pinch each salt and pepper
1/3 cup Parmesan cheese

Cook ravioli according to package instructions. Drain, reserving 1/4 cup cooking liquid.

Meanwhile, in nonstick skillet, heat oil over medium heat; cook garlic, stirring occasionally, until fragrant, about 1 minute. Stir in mushrooms, cook, stirring occasionally, until browned, about 6 minutes. Stir in spinach, cook until lightly wilted, about 1 minute; stir in salt and pepper.

Gently stir in ravioli and reserved cooking liquid; cook until liquid coats pasta, about 1 minute. Top with Parmesan cheese.
