5 minute dessert: pineapple and mint carpaccio

Finishing a meal with something sweet is usually non-negotiable for me. Sure, often times it ends up being just a couple squares of good-quality dark chocolate or a few spoonfuls of fresh berries, but it can sometimes also be a 5-minute dessert like this one!

The classic pairing of fresh pineapple and mint is a delicious combination which turns into a pretty dessert if you take a couple minutes to arrange the slices on the plate.

I like to make this a couple hours ahead of time and keep it in the fridge until dinner time. It’s refreshing, healthy and always satisfying. All you have to do is cut paper thin slices of pineapple using a sharp chef’s knife. Cut each slice into bite size pieces and fan them out on a plate in concentric circles. Top with a small sprinkling of chopped, fresh mint. If you’re making this ahead of time, add the mint at the last second so it stays nice and crisp.
