Quick and easy side dish: 5-Ingredient Potato Skewers

5-ingredient Mediterranean potato skewers

We’ve already covered the advantages of parboiling potatoes and I’ve shared my favourite recipe for quick roasted potatoes, but I can’t leave out another favourite of mine: grilled potato skewers.

Like the roasted potatoes I wrote about yesterday, grilled potatoes are a quick and easy make-ahead side dish that is great for a fast dinner or for entertaining a crowd.

Here’s what you’ll need to do to make my 5-ingredient potato skewers*:

Toss together some parboiled potatoes in a large bowl along with equal amounts of olive oil and lemon juice to coat; season with salt and pepper. Thread potatoes alternately with chunks of red onion. Place on greased grill over medium-high heat, turning occasionally until potatoes are golden brown, about 8 minutes. Sprinkle with crumbled feta cheese and chopped fresh parsley.

*I’m not counting olive oil, salt and pepper as ingredients because these are staples used in many dishes.
