Store summer in a jar!
Sounds tempting, doesn't it? I would give almost anything to have the sweet taste of an Ontario peach in my mouth in mid February, when winter just doesn't seem to end! If you aren't already a seasoned veteran, this is the year to start canning, pickling and preserving.

I haven't canned in years; but when I first did, I buddied up with a friend who canned for years. She took me through all the steps so that I could learn while doing it.

I'm just learning how to can and I need some feedback please.
Has anyone made pickled beets and dills without putting them in a hot water bath for 30 mins?
Seems to me my mother just filled the jars with the hot apple cider solution or brine and that was it. Also What happens if there are air bubbles in the jars. I guess I missed some.
