I need a new dish.
I've know I've blogged a few times about my love of CanadianLiving.com's Slow Cooker Vegetable Soup. I'm crazy about it. I make it at least once a week and each pot lasts two or three days.
That's a lot of Slow Cooker Vegetable Soup.
As the husband and I settled down on the patio tonight in 25°C heat to tuck into our hot, hearty bowls of Slow Cooker Vegetable Soup, I realized I needed to find a new dish for the summer.
"No," my husband protested. "We could just eat this cold."
I guess we could. I mean, I have. But maybe it's time for me to find a more seasonally-appropriate go-to meal. Any ideas? What's your favourite CanadianLiving.com summer dish?

Strawberry Soup
Prep Time: 5 Minutes Ready In: 2 Hours 5 Minutes
Servings: 5
"Strawberries and plain yogurt are pureed with sugar, orange juice and ground cardamom in this recipe for a refreshing chilled summer soup."
Ingredients:
2 pints strawberries
2 cups plain yogurt
1/2 cup orange juice 1/2 cup white sugar
1/2 cup water
1/8 teaspoon ground cardamom
Directions:
1. In a blender, combine the strawberries, yogurt, orange juice, sugar, water and cardamom. Puree until well mixed. Chill and serve.

The Parmesan Risotto (recipe of the day)sounds like a winner to me, of course I would switch it up with couscous because I like the fastest way possible in the summer
Use the broth for the couscous, add the stirfryed veg and sausage and bang, dinner!

Cream of Mango Soup
A refreshing cool and creamy soup made with mango. You may add blueberries or sliced strawberries as a garnish when in season. Fat free sour cream may be substituted for the half-and-half cream.
PREP TIME 10 Min
READY IN 10 Min
Servings: 3
INGREDIENTS
2 mango - peeled, seeded and cubed
1/4 cup white sugar
1 lemon, zested and juiced
1 1/2 cups half-and-half
DIRECTIONS
Place the mango, sugar, lemon juice, lemon zest and half-and-half into a blender or food processor. Cover, and process until smooth and creamy. Serve chilled.

that strawberry soup sounds amazing!!!
I had something similar while on the last cruise I went on...
Here's a good summer salad idea I made a week ago:
Cucumber Salad
-1 cucumber, peeled and chopped into cubes
-1/2 red onion, finely diced
-1 cup shredded carrots
-2-5 cloves of garlic (obviously to taste, and I love garlic!) crushed and finely chopped
---mix all together in a bowl.
-sprinkle about 1/2 tsp (or to taste) of salt over mix
-sprinkle about 1/2 tsp (or to taste) of pepper over mix
-squeeze out the juice of half a lemon over mix
-now TOSS!
