Don't overlook discount mushrooms:
I always check the produce clearance rack when I'm at the grocery store. If they have recently bagged up white mushrooms for half price, I buy as many bags as I can. I then spend some time at home cleaning, slicing and sauteeing and packing into freezer bags. Whenever I want mushrooms, I grab a bag from the freezer, and with a bit of re-sauteeing, they are just like fresh, and make such a big difference in pasta sauces, chili, or beside a steak without having to run out to buy more. They are about a quarter of the price of canned mushrooms but taste so much better! (Buyer beware: If there is already condensation in the bags, forget them, they'll taste like manure!)
