Nan's Spinach and Cheese Pancakes

Quick and easy to make, these pancakes are scrumptious as a main course, side dish or brunch dish.
Ingredients

2/3 cup (160 ml) cooked spinach, drained, chopped
3 eggs
1 cup (250 ml) milk
1/2 cup (125 ml) flour
1/3 cup (80 ml) green onions, chopped (optional)
8 oz (225 g) Canadian Swiss-style cheese, grated
Dab of butter for frying
Preparation
Over medium heat, melt butter in large preheated, non-stick frying pan.
Using 1/4 cup measuring cup, scoop mixture into pan. Fry over medium heat, pushing batter towards center if it spreads. Sprinkle 2 heaping tablespoonfuls of cheese over each pancake.
When bottom of pancake is golden, turn and fry other side about a minute.
Makes 8-10 small pancakes.
