Ingredients

1 tbsp (15 mL) butter
1-1/4 cup (300 mL) thinly sliced onions or shallots
4 cups (1 L) coarsely chopped spinach
3/4 cup (175 mL) crumbled Canadian Blue cheese
3/4 cup (175 mL) low-fat sour cream (5% M.F.) or plain yogurt
1/2 cup (125 mL) light mayonnaise
1/4 tsp (1 mL) each, salt and pepper
1 bag (220 g) kettle or hand-made style chips
Preparation
In large skillet melt butter over medium heat; add onions and cook stirring frequently for 5 minutes or until onions are tender. Cover; reduce heat to low and cook, stirring occasionally for 15 minutes or until golden brown. Increase heat to medium; add spinach and stir 2 to 3 minutes or until wilted; remove from heat.
In medium bowl, combine cheese, sour cream and mayonnaise; mash with back of wooden spoon until cheese pieces are to desired consistency. Stir in onion mixture, salt and pepper.
Cover and refrigerate to allow flavours to blend for 1 hour or up to 1 day.
Additional information : Tip: Dip can be prepared and refrigerated up to one day (24 hours) in advance; the flavours are enhanced as the dip rests. Dip is delicious used as a spread or condiment for wraps, sandwiches, or barbecue hamburgers.
Variation: Stir in 1/4 cup (50 mL) crumbled bacon bits before serving.
