Blue Cheese and Poppy Seed Bites

Ingredients
- 3 cups cooked rice 3 3cups cupscooked rice
- 1 tbsp poppy seeds 1 1tbsp tbsppoppy seeds
- 1/4 cup unbleached flour 1/4 1/4cup cupunbleached flour
- 2 eggs , beaten2 2eggeggs, beaten
- 1-1/3 cup Canadian bleu Bénédictin cheese , crumbled1-1/3 1-1/3cup cupCanadian bleu Bénédictin cheese, crumbled
- 1/3 cup sour cream 1/3 1/3cup cupsour cream or plain yogurt
- Salt and pepper Salt and pepper
- Butter Butter
- Olive oil Olive oil
- Fruit , piecesFruitFruits, pieces
Preparation
Put all ingredients in a mixing bowl, except butter, oil and fruit. Season with salt and pepper to taste. Using a fork, mix into a moderately firm and smooth paste.
Over medium heat in a large non-stick frying pan, heat a little butter and oil. Place tablespoonfuls (15 mL) of paste in pan, keeping them well separated. Slightly flatten with a spatula.
Cook for a few minutes on each side until crunchy. Remove and place on paper towels to absorb excess fat. Repeat until all paste is cooked.
Sprinkle with poppy seeds and serve right away, with pieces of fruits and, if desired, with a creamy sauce.
Makes 18 - 24 bites.
