In fact, simply changing the type of cheese, or using a blend of cheeses, can transform a humble pepperoni pizza into something elegant and gourmet. Canadian Provolone
This semi-firm cheese has a stretchiness comparable to mozzarella when melted, perfect for those lovers of extra ooey-gooey pizza. Provolone is mild and slightly tart, when young with a more sharp flavour when aged.

Who can resist the allure of Canadian cheddar cheese? With so many varieties and ages to choose from, ranging from mild to a sharp aged, even curds, Cheddar makes a great and versatile pizza cheese.
