A staple in the Alabama barbecue scene, this unassuming white sauce packs a punch with bold accents of vinegar, horseradish and pepper.

Ingredients

  • 1 cup mayonnaise
  • 1/4 cup cider vinegar or white wine vinegar
  • 2 tablespoons lemon juice
  • 2 teaspoons prepared horseradish
  • 1 teaspoon freshly ground pepper
  • 1 teaspoon granulated sugar
  • Half small clove garlic , minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper

Method

In small bowl, whisk together mayonnaise, vinegar, lemon juice, horseradish, pepper, sugar, garlic, salt and cayenne pepper until combined; cover and refrigerate until chilled.

Makes about 1 1/2 cups.
