For extra flavour, rub toasted baguette slices with a halved garlic clove.

Ingredients

  • 2 cups frozen peas , thawed
  • 1/2 cup soft herb-and-garlic cheese (such as Boursin) (approx)
  • 2 teaspoons lemon juice
  • 16 slices (1/4 inch thick) baguette , toasted

Method

In food processor, purée together 1 1/2 cups of the peas, the cheese and lemon juice until smooth; spread on baguette slices. Garnish with remaining peas and more cheese, if desired.

Makes 16 pieces.
