Drizzle over our Squash, Quinoa & Pomegranate Salad or Brussels Sprouts, Rice & Halloumi Salad.

Ingredients

  • 1 cup olive oil
  • 3/4 cups lemon juice
  • 1/4 cup tahini
  • 2 large cloves garlic , finely grated or pressed
  • 3 tablespoons grated peeled fresh turmeric or 2 tsp ground turmeric
  • 4 teaspoons Dijon mustard
  • 4 teaspoons liquid honey
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 teaspoon water (approx) (optional)

Method

In food processor, pulse together oil, lemon juice, tahini, garlic, turmeric, mustard, honey, cumin and salt. If dressing is too thick, add water until desired consistency.

Makes 2 cups.
