You won’t miss the potato in this parsnip take on french fries, loaded with sweet and smokey spices, plenty of avocado and creamy goat cheese.

Method

Preheat oven to 425°F. Line baking sheet with parchment paper. On pan, toss parsnips with oil to coat. Sprinkle with paprika, cayenne pepper, garlic powder and salt; toss and arrange in single layer. Roast, flipping twice, until golden and crisp, about 35 minutes.

Transfer to serving platter; top with green onions, avocado, goat cheese and cilantro (if using).

Green Onion Mayo: Meanwhile, in small bowl, stir together green onion, mayonnaise, sour cream and oil. Serve with parsnip fries.

Test Kitchen Tip: To make this a main course, double the avocado and top each portion with a fried egg.
