Fresh and flavourful, these wraps are ready in 15 minutes – way faster than the pizza delivery guy can make it to your door. If you halve and grill the red pepper with the chicken the night before (instead of sauteing), this weeknight meal is ready in even less time.

Ingredients

Method

Stir together soy sauce, lime juice, rice vinegar, sesame oil, ginger, sriracha and garlic; set aside 3 tbsp for dressing.

In skillet over medium-high heat, saute red pepper with 1 tsp of the reserved dressing until tender-crisp, about 5 minutes.

Toss remaining sauce with soba noodles to coat. Thinly slice chicken. Place lettuce leaves on work surface; divide soba noodles, chicken and red pepper between leaves; top with remaining dressing. Fold up.

Makes 4 servings.
