Texas barbecue sauce is thin, full of acidic punch and big on flavour. A little goes a long way. For a thicker style that sticks to ribs, stir in half a cup of ketchup.

Ingredients

  • 1/2 cup packed light brown sugar
  • 1/2 cup cider vinegar
  • 1 tablespoon chopped drained pickled green chilies (optional)
  • 1 1/2 teaspoon dry mustard
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper

Method

In small bowl, whisk together brown sugar, vinegar, chilies (if using), mustard, paprika, salt, cumin and cayenne pepper. Let stand for 15 minutes.

Makes about 1 cup.

CHANGE IT UP: Thick Texas-Style Barbecue Sauce
Stir in 1/2 cup ketchup after letting stand.
