Apple Cran-Curry Salsa
Apple Cran-Curry Salsa is eminently suitable for (what else?) thickly cut grilled turkey cutlets.
Servings: 2 to 4 cups (500 mL to 1 L)
Ingredients:

1/4 cup (50 mL) lemon juice
1/2 tsp (2 mL) grated gingerroot
1/2 tsp (2 mL) curry paste
1 large apple, diced
1 stalk celery, diced
1/3 cup (75 mL) chopped dried cranberries or currants
2 tbsp (25 mL) chopped fresh chives or 1 green onion, minced
Preparation:
In large bowl, whisk together lemon juice, gingerroot and curry paste.
Stir in apple, celery, cranberries and chives. Let stand for 20 minutes.
