Apple Ginger Streusel Pie
A crumbly golden brown topping and moist apple-rich filling make this homey pie irresistible.

1-1/2 tsp (7 mL) chopped crystallized ginger
6 apples
1/3 cup (75 mL) packed brown sugar
1/4 cup (50 mL) whipping cream
Streusel:
1/4 cup (50 mL) all-purpose flour
2 tbsp (25 mL) packed brown sugar
2 tbsp (25 mL) butter
1 tbsp (15 mL) chopped crystallized ginger
Preparation:
Streusel: In bowl, stir flour with sugar, using pastry blender or 2 knives, cut in butter until crumbly. Stir in ginger.
On lightly floured surface, roll out pastry to fit 9-inch (23 cm) pie plate; trim and flute edges. Sprinkle ginger over bottom. Peel, core and cut apples into eighths; toss with sugar. Arrange wedges upright on ends at 45-degree angle in concentric circles in shell. Pour cream over apples; sprinkle with streusel.
Bake in 425°F (220°C) oven for 15 minutes. Reduce heat to 375°F (190°C); bake for 1 hour or until apples are softened and topping is golden.
