Apple Mustard Dressing
Apple juice concentrate is stronger flavoured than apple juice so it gives lots of taste without diluting the dressing. Vegetable stock is a useful ingredient when you're trying to eliminate or reduce oil.

1/4 cup (50 mL) apple juice concentrate
1/4 cup (50 mL) vegetable stock
1/4 cup (50 mL) light mayonnaise
2 tbsp (25 mL) cider vinegar
2 tbsp (25 mL) each Dijon and grainy mustard (or 1/4 cup/ 50 mL of either)
1 clove garlic, minced
Preparation:
In small bowl, whisk apple juice concentrate, stock, mayonnaise, vinegar, Dijon and grainy mustards and garlic. (Make-ahead: Refrigerate in airtight container for up to 5 days.)
