Suggested Recipes

1-3/4 cups quick-cooking rolled oats
1-3/4 cups plain Yogurt, 1% or 2%
2 eggs
1 cup shredded apples, peeled
1/4 cup vegetable oil
1 tsp vanilla
2 cups whole wheat flour
3/4 cup packed brown sugar
4 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/2 tsp nutmeg
1/2 tsp salt
3/4 cup raisins or dried cranberries
Preparation:
In bowl, combine oats and yogurt; let stand for 10 minutes. Whisk in eggs, apple, oil and vanilla.
In large bowl, combine flour, sugar, baking powder, cinnamon, baking soda, nutmeg and salt. Pour yogurt mixture over dry ingredients.
Sprinkle with raisins; stir just until moistened. Spoon into greased or paper-lined muffin cups.
Bake in centre of 375°F (190°C) oven for 35 minutes or until golden brown and tops are firm to touch.
Let cool in pan on rack for 5 minutes; transfer to rack and let cool completely. (Can be stored in airtight container for up to 1 day or frozen for up to 2 weeks.)
