Apple Schnapps
In the long, dark evenings of winter, what would be more welcome than a fragrant whiff of sunny apple-orchard autumn preserved in schnapps? Tell the lucky recipient to serve this schnapps chilled from the refrigerator in small shot glasses with hors d'oeuvres. Or perhaps guests would enjoy it at room temperature as a digestif with dessert or after dinner.

4 apples
1/2 cup (125 mL) granulated sugar
1 bottle (750 mL) vodka
Preparation:
Remove stems from apples. Scrub in warm soapy water; rinse well and let dry. Quarter and seed apples; slice thinly, without peeling or coring.
In 4-cup (1 L) glass jar, mix apples with sugar; seal and let stand in cool, dark place for 3 days.
Add vodka, filling to top. Seal and let stand in cool, dark place for at least 3 weeks or for up to 2 months.
Strain through fine sieve, pressing apples to release liquid; discard solids. Strain again through coffee filter into decorative bottle; seal bottle. (Make-ahead: Store for up to 6 months.)

Ginger Apple Schnapps: Mix 10 thin slices gingerroot along with sliced apples.
