8 red-skinned apples
1-1/2 cups (375 mL) water
1-1/2 cups (375 mL) granulated sugar
1/2 tsp (2 mL) cinnamon
Pinch ground cloves
Preparation:
Without peeling or coring, chop red-skinned apples. In heavy saucepan, combine apples with water; bring to boil. Reduce heat, cover and simmer, stirring occasionally, for about 30 minutes or until very soft. Push through food mill or sieve; return to clean saucepan.
Add granulated sugar, cinnamon and pinch ground cloves; simmer, stirring often, for about 35 minutes or until wooden spoon scraped across bottom of pan leaves hollow that takes 3 seconds to fill in. Ladle into sterilized jars, leaving headspace. Seal and store in refrigerator for up to 1 month.
