Golden and crisp on the outside with an ooey-gooey filling on the inside, this pound cake sandwich is cleverly disguised to look like bread.

Ingredients

  • 3/4 cup 3/4cupcream cheese, softened
  • 3 tbsp 3tbspgranulated sugar
  • 1 tsp 1tspgrated lemon rind
  • 4 tsp 4tsplemon juice
  • 1/4 tsp 1/4tspvanilla
  • 12 slices (1/4 inch/5 mm thick) 12slices (1/4 inch/5 mm thick)Lemon Pound Cake
  • 2 tbsp 2tbspbutter

Preparation

In bowl and using fork, mash together cream cheese, sugar, lemon rind, lemon juice and vanilla until smooth. Spread over 6 of the pound cake slices. Sandwich with remaining slices.

In large nonstick skillet, melt half of the butter over medium heat; cook half of the sandwiches, turning once, for about 3 minutes or until edges are crisp and golden. Repeat with remaining sandwiches.
