April Fool's recipe: Grilled Pound Cake Sandwiches
Golden and crisp on the outside with an ooey-gooey filling on the inside, this pound cake sandwich is cleverly disguised to look like bread.

3/4 cup (175 mL) cream cheese, softened
3 tbsp (45 mL) granulated sugar
1 tsp (5 mL) grated lemon rind
4 tsp (20 mL) lemon juice
1/4 tsp (1 mL) vanilla
12 slices (1/4 inch/5 mm 12 thick) Lemon Pound Cake
2 tbsp (25 mL) butter
Preparation:
In bowl and using fork, mash together cream cheese, sugar, lemon rind, lemon juice and vanilla until smooth. Spread over 6 of the pound cake slices. Sandwich with remaining slices.
In large nonstick skillet, melt half of the butter over medium heat; cook half of the sandwiches, turning once, for about 3 minutes or until edges are crisp and golden. Repeat with remaining sandwiches.
