5 ways to use microgreens

Have you ever had microgreens? I have, and I’m in love. I could tell you that microgreens are packed with essential vitamins and minerals, that they are incredibly nutritious and hold 4 to 6 times more healthful nutrients than the mature vegetable they’ll grow into -- all true facts -- but most importantly I just want to share how much I love the taste and texture they add to meals. They’re tender, super flavourful and available in dozens of varieties (radish, pea shoot, mustard and so on). The only caveat? They’re not always easy to find in regular grocery stores, so keep an eye out and stock up whenever you can! They’re also fairly easy to grow in your own home, so if you have a green thumb (or want one) give it a go. You’ll often see microgreens as a garnish in higher end restaurants, but I love including them in regular meals – they’re good for you, taste great and make your daily meals more varied if, like me, you’re prone to boredom when you don't vary your meals everyday. Here are 5 easy ways to add microgreens to your daily meals. Use them in: {1} Salads: use them in lieu of your usual lettuce to spruce up your lunch salads {2} To top pizzas: pile a small handful on top of your freshly baked pizza to add a crisp topping {3}  Soups: stir them in at the last minute or use as a garnish {4} Sandwiches: Layer a few microgreens instead of lettuce in a chicken sandwich {5} Smoothies: add a handful to a kale smoothie
