Once in a while a cookbook comes into the Test Kitchen that gets me fired up! And this revised, updated copy of Deborah Madison's classic, aptly titled The New Vegetarian Cooking for Everyone, is one such book. The original (Vegetarian Cooking for Everyone) was published in 1997. I received my copy about 15 years ago and have used it countless times as inspiration. Her books are word heavy (not one picture in the the revised version), but her flavour combinations are so inspired and her writing so graceful that I never miss the photos. Beautiful images come to mind without them. Now, I'm not a vegetarian. But it doesn't matter - this book appeals to anyone who loves to cook. Her passion for food, her calm prose and her simple, common-sense approach to cooking is so refreshing in a world increasingly heavy with bacon-stuffed, deep-fried, hot sauce-drenched, fermented, artisanal whatnots.
