My blog on Saskatoon Berries has proven to be very popular. A foodie-file reader was asking for a recipe for saskatoon berry pie. I found a recipe that Canadian Living published in our Market Fresh special issue. Since I'm still getting alot of interest in Saskatoon Berries, I thought I would post the recipe here. Here it is! It’s pretty basic, if you have a recipe for blueberry pie that you like, I’m sure you could substitute the Saskatoon berries for blueberries and get good results. For the filling: 5 cups Saskatoon berries 1/2 cup granulated sugar 1/4 cup all-purpose flour 1/2 tsp grated orange rind 1 T orange juice Mix everything together and use in your favourite pie crust. Or, if you don't have one, use our Sour Cream Pastry. OK, if anyone tries this recipe, or if you have other recipes that feature Saskatoon berries, let me know. Send me a picture of your finished product at firstname.lastname@example.org and I will post it in my blog. Click here to sign up for Christine's Food for Friends e-newsletter!
