Side dish of the day: Roasted Chili Lemongrass Squash

Some people love squash for its sweetness, but others don't like it for the very same reason. If you belong to that second group and have given up on squash, I strongly suggest that you give this recipe a try. The slight heat from the chili oil and tang of the fresh lime juice goes a long way to balance the sweetness of the squash. We've used pepper squash, but you can substitute with any squash you like.
