Rheanna Kish from the test kitchen was recently in Manitoba, so I asked her for a foodie-find from there for today's post. Here is her recommendation: "Smoked Winnipeg Goldeye from Gimli Fish Market...yum! They smoke their own fish over oak chips. It’s a fish that's native to Manitoba waters and has the same oily richness of smoked trout, but with a soft, subtle smokey and fishy flavour." What I've read about Goldeye is that it really isn't very good at all when it is fresh, but smoking it makes it really special.
