Ingredients

  • 1 bunch (1 lb/500 g) asparagus , trimmed1 bunch (1 lb/500 g) asparagus, trimmed
  • 4 slices prosciutto 4 slices prosciutto
  • Dressing:
  • 1/4 cup diced tomato 1/4 cup diced tomato
  • 2 tbsp extra-virgin olive oil 2 tbsp extra-virgin olive oil
  • 4 tsp red wine vinegar 4 tsp red wine vinegar
  • 1 clove garlic , minced1 clove garlic, minced
  • 1/4 tsp salt 1/4 tsp salt
  • 1/4 tsp pepper 1/4 tsp pepper
  • 1/4 tsp chopped fresh thyme 1/4 tsp chopped fresh thyme

Preparation

Dressing: In bowl, combine tomato, oil, vinegar, garlic, salt, pepper and thyme; set aside.

In saucepan, cover and blanch asparagus in boiling salted water until tender-crisp, about 2 minutes. Drain well.

Arrange one-quarter of the asparagus across each slice of prosciutto; roll up. Place, seam side down, on greased baking sheet. Broil, 6 inches (15 cm) from heat and turning halfway through, until hot and prosciutto is crisp, about 6 minutes. Serve with dressing spooned over top.
