Ingredients
- 1 bunch (1 lb/500 g) asparagus , trimmed1 bunch (1 lb/500 g) asparagus, trimmed
- 4 slices prosciutto 4 slices prosciutto
- Dressing:
- 1/4 cup diced tomato 1/4 cup diced tomato
- 2 tbsp extra-virgin olive oil 2 tbsp extra-virgin olive oil

Preparation
In saucepan, cover and blanch asparagus in boiling salted water until tender-crisp, about 2 minutes. Drain well.
Arrange one-quarter of the asparagus across each slice of prosciutto; roll up. Place, seam side down, on greased baking sheet. Broil, 6 inches (15 cm) from heat and turning halfway through, until hot and prosciutto is crisp, about 6 minutes. Serve with dressing spooned over top.
