Bacon and Egg Mini Pita Pockets

Make lunchtime fun with bite-size pitas. Figure on two to three pita pockets per child aged six to nine. For older children and teens, use regular-size pitas and add lettuce, tomatoes and sprouts.

    2 strips bacon, cooked and crumbled
    1 green onion, sliced
    2 tbsp (25 mL) light mayonnaise   
    1/4 tsp (1 mL) Dijon_mustard  
    Pinch pepper   
    12 mini pitas  

Preparation:

In large bowl, mash hard-cooked eggs. Stir in crumbled bacon, sliced green onion, light mayonnaise, Dijon mustard and pepper.

Cut slit in top of each pita. Fill each pita pocket with egg mixture.
