1 can (6 oz/170 g) solid white tuna, drained
3 tbsp (50 mL) light mayonnaise
2 tsp (10 mL) dijon mustard
Pinch pepper
1/4 cup (50 mL) each finely chopped celery and green onions
8 grape or cherry_tomatoes, quartered, or 1 plum tomato, seeded and chopped
1 baguette (8 inches/20 cm) or other crusty bread
2 deli-thin slices cheddar or havarti cheese (about 1-1/2 oz/45 g), cut in half
Preparation:
In bowl, flake tuna. Stir in mayonnaise, mustard and pepper; stir in celery and green onions. (Make-ahead: Cover and refrigerate for up to 24 hours.) Stir in tomatoes.
Cut bread lengthwise in half. Lay, cut side up, on toaster oven tray. Spread tuna mixture over bread; top each with 2 strips cheese. Broil, watching closely, until cheese is bubbly, 1 to 2 minutes.
