- 1 cup unsalted butter softened
- 1 cup granulated sugar
- 2 eggs
- 2/3 cups fancy molasses
- 1/2 cup cooking molasses
- 6 cups all-purpose flour
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1 teaspoon clove
- 1 teaspoon baking soda
- 1/2 teaspoon salt
MethodIn large bowl, beat butter with sugar until fluffy; beat in eggs, fancy molasses and cooking molasses until combined.
Whisk together flour, ginger, cinnamon, cloves, baking soda and salt; stir in flour mixture, blending with hands if necessary to knead dough together.
Divide in half; flatten into discs. Wrap each in plastic wrap; refrigerate until firm, about 2 hours.
