Ingredients

Chocolate Ganache:

Method

In bowl, stir together graham crumbs, butter and cinnamon until combined; press onto bottom of parchment paper–lined 9-inch (2.5 L) square cake pan. Bake in 350ºF (180ºC) oven until set, 10 to 12 minutes. Let cool on rack.

Chocolate Ganache: Place chocolate in heatproof bowl. In saucepan, heat cream over medium-high heat just until boiling. Pour over chocolate; whisk until smooth. Let cool for 3 minutes.

Arrange bananas on cooled crust, leaving 1/4-inch (5 mm) border. Pour ganache over bananas, smoothing and levelling top. Refrigerate until set, about 1 hour.

In small saucepan, sprinkle gelatin over 1/4 cup water; let stand for 5 minutes. Heat over low heat until dissolved, about 2 minutes.

In large bowl, beat cream cheese until smooth; beat in condensed milk, whipping cream and gelatin mixture. Spread over ganache, smoothing top; refrigerate until set, about 4 hours. (Make-ahead: Cover and refrigerate for up to 3 days.)
