Fruity Cookie Parfaits

A summer dessert that can be assembled in minutes, these parfaits are a refreshing change from higher-fat ice cream.

  • Portion size 4 servings

Ingredients

  • 12 ginger or vanilla cookies
  • 1 cup raspberries or sliced strawberry
  • 1 banana sliced
  • 1/2 teaspoon grated orange rind
  • 2 cups vanilla yogurt

Method

In plastic bag, crush cookies just enough to leave a few large pieces and make 1 cup (250 mL) crumbs; set aside.

In bowl, mix together raspberries and banana; set aside. Stir grated orange rind into yogurt.

Dividing evenly, spoon half of the cookie crumbs into 4 parfait or wine glasses. Top with half of the yogurt mixture then half of the fruit. Repeat layers once.
