Ginger Macadamia Blondies

Ingredients

  • 9 oz white chocolate chopped
  • 1/3 cup salted butter
  • 1/2 cup granulated sugar
  • 1/4 cup fancy molasses
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/3 cup all-purpose flour
  • 1 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cloves
  • 1 pinch salt
  • 1/2 cup chopped macadamia nut

Method

In saucepan, melt 1 cup (250 mL) of the chocolate with butter over low heat. Remove from heat; whisk in sugar and molasses. Whisk in eggs, 1 at a time, whisking well after each; whisk in vanilla.

In bowl, whisk together flour, ginger, cinnamon, baking soda, cloves and salt; whisk into chocolate mixture.

Stir in nuts and remaining chocolate. Spread in parchment paper–lined 9-inch (2.5 L) square metal cake pan. Bake in 325°F (160°C) oven until tester inserted in centre comes out clean, about 45 minutes. Let cool. Refrigerate until chilled, about 2 hours. Cut into bars.
