Ingredients

  • 3 apples peeled and cored
  • 1/3 cup butter melted
  • 3 eggs
  • 3/4 cups all-purpose flour
  • 3/4 cups milk
  • 1 tablespoon granulated sugar
  • 1 pinch salt
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg

Method

Cut apples into 1/2-inch (1 cm) thick slices; set aside.

In blender or food processor, blend 2 tbsp (25 mL) of the butter, eggs, flour, milk, sugar and salt until smooth. Set batter aside.

In 10-inch (25 cm) cast-iron or heavy ovenproof skillet, heat remaining butter over medium heat; cook apples, brown sugar and cinnamon, stirring occasionally, until golden and tender, 15 minutes.

Pour batter over apples. Bake in 425°F (220°C) oven until puffed and edge is browned, about 20 minutes.

If desired, invert onto serving plate, scraping any remaining apples and syrup onto puff. Serve immediately.
