Lemon Lime Tofu Zinger

Ingredients

  • 2/3 cups granulated sugar
  • 2/3 cups water
  • 2 lemons grated and squeezed to make 3/4 cup juice and 1 tbsp (15 mL) rind
  • 2 limes grated and squeezed to make 3/4 cup juice and 1 tbsp (15 mL) rind
  • 1 pkg tofu and juice, stir in rind

Method

Simple Syrup: In saucepan, bring sugar and water to boil, stirring to dissolve sugar. Let cool completely.

Wash, prepare lemons and limes and pur?with tofu and juice to make Fresh Fruit Pur? Mix with 2 batches of Simple Syrup.

Freeze in shallow metal cake pan for about 4 hours or until firm. Break into chunks; pur?in food processor. Pack into airtight container and refreeze for 4 hours or until firm or for up to 2 days. (Or freeze in ice cream machine according to manufacturer's instructions.)
