These little loaves work wonders as gifts, but you can also set them out as a sweet afternoon treat or as part of a holiday brunch. For a selection of flavours, make the Chocolate-Pear Loaves and Chestnut Loaves as well and package the trio in a pretty tin.

Ingredients

  • 1 1/2 cup granulated sugar
  • 1 cup Balkan-style plain yogurt
  • 6 eggs
  • 2/3 cups vegetable oil
  • 3 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup chopped pistachio nut
  • 2 tablespoons grated lemon zest
  • 1/4 cup lemon juice
Topping:
  • 1 cup icing sugar
  • 3 tablespoons lemon juice
  • 1/4 cup chopped pistachio nut

Method

In large bowl, whisk together sugar, yogurt and eggs; whisk in oil. Whisk together flour, baking powder, baking soda and salt; stir into yogurt mixture in 2 additions. Fold in pistachios, lemon zest and lemon juice. Scrape into 6 greased 5-3/4- x 3-1/4-inch (625 mL) mini loaf pans.

Bake in 350ºF (180ºC) oven until cake tester inserted in centre comes out clean, 25 to 30 minutes. Let cool in pans on rack for 5 minutes. Transfer to rack; let cool completely.

Topping: Whisk icing sugar with lemon juice; drizzle over loaves. Sprinkle with pistachios.
