Seedy Oatmeal Raisin Cookies

Ingredients

  • 1/2 cup salted butter softened
  • 1/3 cup granulated sugar
  • 1/3 cup packed brown sugar
  • 1 egg
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • 1 cup all-purpose flour
  • 1 cup quick-cooking rolled oats (not instant)
  • 1/4 cup shelled green pumpkin seed (pepitas)
  • 1/4 cup shelled unsalted sunflower seed
  • 2 tablespoons sesame seeds
  • 2 tablespoons flaxseeds (optional)
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch cinnamon
  • 1 pinch salt
  • 1/2 cup raisin

Method

In large bowl, beat together butter, granulated sugar and brown sugar until fluffy; beat in egg. Beat in milk and vanilla.

In separate bowl, whisk together flour, oats, pumpkin seeds, sunflower seeds, sesame seeds, flaxseeds (if using), baking powder, baking soda, cinnamon and salt; stir into butter mixture in 2 additions. Stir in raisins.

Drop by rounded 1 tbsp (15 mL), about 2 inches (5 cm) apart, onto parchment paper–lined baking sheets. Bake in 350°F (180°C) oven until firm to the touch, about 12 minutes. Let cool on pans on racks for 2 minutes; transfer to racks and let cool completely.
